Chicken and rice with avocado sour cream


Chicken and rice with avocado sour cream
Comes together in about 25 minutes
Serves 4 adults - but I usually make extra since it reheats great then next day!

Ingredients-
2 chicken breasts - cut into chunks
Olive oil
Salt and pepper
2 cups rice
2 cups chicken stock/broth
1 cup tomato sauce
1 packet Sazon seasoning - found in the Spanish section of most grocery stores

Heat 1 tablespoon of the oil in a large lidded skillet over medium heat.  Add the chunked chicken and brown about 3 minutes.
 Add rice and mix well with chicken and left over oil.
Carefully add the stock, tomato sauce and sazon seasoning.  Mix together well, bring to a low boil and reduce heat to low and put the lid on.
 Allow to cook for 20 minutes.  Stir with a fork to fluff the rice.

Avocado sour cream makes a great topper for this rice.  It is also good as a dip or sandwich spread.
Ingredients
1 large Florida or 3 small Haas avocados - remove skins and seeds chunk flesh for a better fit in 
   food processor
1 cup sour cream
1 Tbsp lime or lemon juice
1 clove garlic
Salt


Place all ingredients in a food processor and puree until smooth.  Cover and let chill in the fridge until you are ready to eat.

Buffalo sauce - Wing sauce


Buffalo sauce - or wing sauce contains just 2 ingredients hot sauce and butter.  You can adjust the heat level simply by using a different hot sauce.
Mild - 1/4 cup Texas Pete hot sauce and 1/4 cup melted butter
Medium - 1/4 cup Franks Red Hot sauce and 1/4 cup melted butter
Hot - 1/4 cup Tabasco and 1/4 cup melted butter
Insanity - 1/4 cup Habanero sauce and 1/4 cup melted butter

Try them all!

Ranch dressing

Super simple ranch dressing - great as a dip too



Ingredients -
1/2 cup sour cream
1/2 cup mayonnaise
1/2 buttermilk
1 Tbsp Worcestershire
1 Tbsp chives
2 Tbsp Parmesan cheese
1 Tbsp parsley
1 tsp dried oregano
1 tsp dried dill weed
Dash of hot sauce


Mix everything together - refrigerate for 2 hours before serving
Will keep for about 2 weeks in the fridge.

Ketchup

Ketchup - The #1 condiment around here, followed closely by honey mustard but that's another post.  Why make it yourself?  The store bought stuff is LOADED with high fructose corn syrup and "natural and artificial" flavorings.  The stuff you make at home has 6 ingredients and is super easy.
Here is what you need to get started -

28oz can of whole tomatoes
1 Medium onion - chopped
2 Tbsp olive oil
1 Tbsp tomato paste
1/3 cup dark brown sugar
1/2 cup cider vinegar
1/2 tsp salt

Puree tomatoes in a blender and add to a large pot - You want high sides so when it is simmering it doesn't go all over your stove.

Add olive oil and onions to a small saute pan and cook over medium heat for 5 minutes.  Add to tomato puree.
 Bring to a low simmer and allow to simmer uncovered for 1 hour until thickened.

Put back into the blender - be careful its very hot!  Puree until smooth (vent lid to let the steam out)
 Store covered in the fridge for about a month - if you can make it last that long.

To much work you say?  No problem - instead of simmering on the stove put it in the crock pot and leave the lid off.  Low for 4-6 hours will do the same thing.
